Outfitting a commercial kitchen isn't as easy as it sounds, and it's an ongoing process as you figure out what you really need to make things flow smoothly. When you do find that another piece of equipment might be a good addition, stop and evaluate the situation carefully. Sometimes whether you should get additional equipment or not isn't that clear-cut.

Ease of Cleaning

Any item you get has to be easy to clean. One mistake can set you back should the health inspector show up for a surprise look at your kitchen. Plus, no one is going to want to touch the equipment if it turns out to be a pain to clean, and even a small drop in morale can make working in the kitchen much less enjoyable.

Exasperated Wishes

Sometimes you'll be in the middle of a task and exasperatedly rant about how you wish you had this or that item to help you out. Maybe an extra stand mixer would make your work go more quickly, or maybe having additional meat slicers could help you serve more customers. How quickly will that item pay for itself? If it's necessary for you to increase your business or you know the foods created with it will be big sellers, those are good reasons to go ahead and buy the equipment. But if you're getting it only so you can make the latest faddish food, you might want to think again because fads don't always last that long.

Storage Space

This isn't such a big question if you already have a big kitchen, but for smaller outfits, be sure you have a place to put the equipment, especially those items like individual stand mixers. You're not going to leave it out on the counter all the time unless you dedicate a space for it, so there's got to be room to store it when you're done with it for the day.

For established commercial kitchens, buying new equipment can be interesting, but it's not something you have to jump into without looking. Always consider how having the equipment would really affect your operations to ensure you buy items that truly will help you.
